Looking for an easy and delicious weeknight dinner? Make beef fajitas in the oven tonight. Sheet pan dinners are one of my favorite types of meals to cook for my family. And these sirloin steak sheet pan fajitas are table ready in 30 minutes with great flavor and easy cleanup.

With this fajita tray bake, you'll chop your veggies, season your steak, and put everything on the sheet pan, and stick it in the oven. Dinner will be ready for you 20 minutes later! It's really that easy.

While your beef fajitas are cooking in the oven, you can set the table or pour yourself a glass of wine and relax.

I like mixing up the veggies in this recipe to use what I have on hand. So, while the recipe at the bottom of the page calls for carrots, peppers, and onions, you could easily omit one or more of those, or swap them out for another vegetable.

How to make beef fajitas in the oven

After mixing up your spices (with this easy taco seasoning recipe - also written out in the recipe below), you'll chop your veggies and prepare your meat.

The reason sheet pan recipes work is because all the veggies are cut to a thickness so that they're done cooking around the same time as each other and the meat. But if you leave huge pieces of carrot on a tray with a thinly sliced bell peppers, it's not gonna work.

Prep the veggies:

  • I chopped the carrots pretty thin (¼" or less)
  • The bell peppers were somewhere between ¼" and ½"
  • I chopped the onion between ¼" and ½".

Prep the steak:

Once your veggies are ready, it's time to prep the steak. This recipe uses sirloin steak, but flank steak is also a common choice for fajitas. If you want to use flank steak, go ahead! I say use what you've got.

Leave the steak whole. Depending on the thickness and size of your steak, you may need to take it out of the oven before the veggies are done. This isn't all bad, because it'll give the meat time to rest before you need to cut into it.

With my sirloin steak that was about ¾" thick, and rather large, I left it in for the whole 20 minutes and it was cooked to a "medium", with a little pink in the middle.

Cook your beef fajitas in the oven:

Put the meat and veggies in a single layer on the sheet pans. Drizzle oil and sprinkle salt over everything. Sprinkle the seasoning mix over the veggies and rub the remaining seasoning into the meat on both sides.

Cook your fajita tray bake in your 400 (F) degree oven for 15-20 minutes (until steak is cooked how you like, and veggies are done).

Squeeze the lime juice over everything for a boost of flavor. Then you get to eat and enjoy!

Baked steak fajitas three ways

These oven baked steak fajitas can be made in a few different ways (all from the same recipe):

  1. Steak Fajita Salad: Get some greens, put the steak and veggies on top and you've got a salad! This makes it into delicious keto steak fajitas (without tortillas).
  2. Simple Steak Fajitas: Get some tortillas (homemade tortilla recipe), and fill them up with the steak and veggies from the sheet pan.
  3. Deluxe Fajitas: Make a few extra dishes (guacamole, rice, beans) to go with your steak fajitas. The extra dishes are optional, and totally up to you based on what you have time for and what sounds the best.

No matter how you eat them, the cooking process is made super simple on a couple sheet pans.

Ingredient Substitutions

Whether you're throwing this together at the end of a long day, or you're catering to people with food allergies or sensitivities, it's always nice to have options with which ingredients you use.

  • Veggies: I use carrots, peppers, and onions. You can only use peppers and onions, or add in another veggie (like zucchini). The important thing to remember is to get everything in the right size so it cooks at the same time (that's what's great about a sheet pan meal).
  • Tortillas: If you're using store-bought tortillas, you typically have the choice of corn or flour. If you're making your own, you can make corn tortillas, make flour tortillas, or make a gluten free & grain free Cassava flour tortilla.   • Spices: As the recipe is written, it's mild on the spice scale. If you'd like to amp up the spicy-ness, you can do it to the whole sheet pan by sprinkling in some cayenne pepper (a little goes a LONG way), or use your favorite hot sauce when you dish up your plate.

Recipe Notes & Tips

After making these sheet pan steak and veggies fajitas several times, I've compiled a list of my best tips and tricks for you.

  • For a mess-free meal, line your sheet pan with foil to make cleanup a breeze.
  • I always recommend people measure their oven and get two sheet pans that will fit side by side so you don't have to worry about changing their positions mid-way through cooking. Order the size you need here.
  • Just a reminder about how to check steak done-ness - Use a digital instant read thermometer (like this one). The steak is rare at 120(F), medium-rare at 130(F), medium at 140(F), medium-well at 150(F), and well done at 160(F).

Ingredients

  • 1 lb sirloin steak
  • 2 bell peppers
  • ½ onion
  • 2 large carrots
  • 2 Tbs oil
  • ½-1 tsp salt (enough to sprinkle over veggies and meat)

  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1 lime
  • cilantro, for garnish (optional)

Instructions

  1. Slice your veggies into strips – carrots about ¼″ wide, peppers and onions about between ¼″ and ½″ wide.
  2. Preheat oven to 400 (F).
  3. Arrange everything on your sheet pan in a single layer (or two, depending on the size you have).
  4. Drizzle oil evenly over everything.
  5. Sprinkle salt evenly over everything.
  6. Mix the spices together in a small bowl and sprinkle about half the mixture over the veggies, and rub the rest into both sides of the meat.
  7. Put the halved lime on the sheet pan, cut side down and bake with everything else for extra flavor.
  8. Bake for 15-20 minutes. If your steaks are smaller, you'll want to pull them out earlier. Timing on the steak depends on the done-ness that you want.
  9. Squeeze the lime juice over the cooked veggies and meat, then enjoy!
  10. Eat the meat and veggies with tortillas or on a bed of lettuce.
  11. Top with guacamole and cilantro (optional)
